Peanut Butter Banana Protein French Toast - A Cozy, High-Protein Breakfast

Ingredients
  

  • Bread (4 slices): Thick-cut works best. Try brioche, sourdough, or whole-grain if you want more fiber.
  • Eggs (2 large): The base of the custard.
  • Milk (3/4 cup): Dairy or unsweetened almond, oat, or soy milk.
  • Vanilla protein powder (1 scoop): Whey or plant-based. Choose a brand that blends smoothly.
  • Peanut butter (2 tablespoons): Creamy works best for drizzling or whisking into the custard.
  • Banana (1 large): Sliced. Extra for topping if you like.
  • Vanilla extract (1 teaspoon): For warmth and flavor.
  • Cinnamon (1/2 teaspoon): Optional but recommended.
  • Salt (pinch): Balances the sweetness.
  • Sweetener (optional): 1–2 teaspoons maple syrup, honey, or your preferred sweetener in the custard.
  • Cooking fat: Butter, coconut oil, or a light spray for the pan.
  • Toppings: Sliced banana, a drizzle of warmed peanut butter, maple syrup, chopped peanuts, or Greek yogurt.

Method
 

  1. Make the custard. In a mixing bowl, whisk eggs, milk, vanilla, cinnamon, and a pinch of salt until smooth. Sprinkle in the protein powder and whisk again until fully dissolved. If your powder clumps, use a small whisk or blend briefly.
  2. Add peanut butter. Whisk 1 tablespoon of peanut butter into the custard until incorporated. It doesn’t have to be perfect—small streaks are fine.
  3. Prep the bread and banana. Slice the banana and set aside. If your bread is very fresh and soft, let it sit out for 5–10 minutes so it absorbs the custard better.
  4. Heat the pan. Warm a nonstick skillet or griddle over medium heat. Add a small pat of butter or a light spray to coat the surface.
  5. Soak the bread. Dip each slice into the custard for about 10–15 seconds per side. Let excess drip off so it doesn’t pool in the pan.
  6. Cook the French toast. Lay slices on the hot pan. Cook 2–3 minutes per side, until golden with lightly crisp edges. Adjust heat if it browns too fast before the center sets.
  7. Caramelize the banana (optional but amazing). Push toast to one side or use a second pan. Add a small dab of butter, then the banana slices. Cook 1–2 minutes per side until lightly browned and soft.
  8. Finish with peanut butter. Warm the remaining 1 tablespoon peanut butter in the microwave for 10–15 seconds to make it drizzle-friendly.
  9. Serve. Plate the toast, top with caramelized bananas, drizzle with peanut butter, and add maple syrup if you like. Sprinkle chopped peanuts for crunch or add a spoonful of Greek yogurt for extra protein.
